Determined not to go to the store I decided to create a nice simple vegetable dish using things we packed for our trip from home.
Here's what I did
Cut 3 large carrots into spears and lightly steamed you want them still kinda crunchy
Toast almonds 1/4 cup chopped almonds in about 1/4 cup of butter on med to high heat
Add 1/2tsp of each sage, tarragon and thyme. 1 tsp onion powder
Add 1 lb asparagus spears and carrots to butter and almonds
Add 2 TBS red wine
Cook until asparagus is just starting to become tender.
Makes 4 good size portions
